One focus of this project is the production of biopolymer-based aerogels for different food applications via CO2 induced gelation. Aerogel properties like specific surface area and stability are optimized varying process parameters (temperature, pressure) and solution parameters (biopolymer concentration, composition). The second part of this work is the investigation of the mechanism of the CO2 induced gelation of biopolymer solutions.
